Rhubarb Lemonade

What you need:
- 960 g rhubarb, trimmed and chopped
- 600 g sugar (or sweetener of choice)
- AquaTru purified water, for diluting (amount as desired)
- 3 tablespoons grated lemon zest
- 360 ml lemon juice

How to do it:
- Combine the rhubarb, sugar, and 500 ml of AquaTru water in a saucepan.
- Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes, or until the rhubarb is soft.
- Strain the mixture into a jug, pressing down to extract as much juice as possible.
- Stir in the lemon juice.
- Dilute with additional AquaTru water to your preferred level of tartness.
- Chill thoroughly and serve over ice.
