Rhubarb Lemonade

Nothing heralds the British springtime quite like the distinctly tart flavour of rhubarb. Mixed with fresh lemon, it turns into a sweet and sour cordial that you can dilute into a refreshing lemonade. By using AquaTru purified water, you’ll preserve rhubarb’s bright, natural tang without any chlorinated or mineral tastes getting in the way.   • What you need:

    • 960 g rhubarb, trimmed and chopped  
    • 600 g sugar (or sweetener of choice)  
    • AquaTru purified water, for diluting (amount as desired)   
    • 3 tablespoons grated lemon zest    
    • 360 ml lemon juice  
  • How to do it:

    1. Combine the rhubarb, sugar, and 500 ml of AquaTru water in a saucepan.  
    2. Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes, or until the rhubarb is soft.  
    3. Strain the mixture into a jug, pressing down to extract as much juice as possible.  
    4. Stir in the lemon juice.  
    5. Dilute with additional AquaTru water to your preferred level of tartness.  
    6. Chill thoroughly and serve over ice.
