  • What you need:

    • 480 ml boiling water   
    • 30–40 grams of lavender flowers    
    • 480 ml cold water   
    • 240 ml lemon juice   
    • 200 grams sugar 
  • How to do it:

    1. Place the lavender in a large jug.  
    2. Pour the boiling water over it.  
    3. Cover with cling film (plastic wrap) and let it steep for 10 minutes.  
    4. Strain out the lavender, discard the solids, and return the infused water to the jug.  
    5. Add the cold water, lemon juice, and sugar. Stir until the sugar has fully dissolved.  
    6. Chill in the fridge until ready to serve.
