
Pumpkin Spice Latte
This homemade PSL is creamy, cosy and ready in minutes. Pumpkin purée brings natural beta carotene which your body can convert to vitamin A. A little cinnamon adds classic warmth and current evidence suggests it can modestly lower fasting blood glucose in adults with type 2 diabetes, so the spice blend is doing more than tasting nice.

What you need:
- 240 ml whole milk
- 30 ml pumpkin purée
- 15 ml maple syrup
- 2.5 ml pumpkin pie spice plus more for garnish
- 5 ml pure vanilla extract
- 60 ml hot espresso or strong coffee
- water
- Whipped cream for garnish

How to do it:
- In a small saucepan over medium heat whisk the milk, pumpkin purée, maple syrup, pumpkin pie spice, vanilla, and a bit of water. Heat until steaming, then blend with a stick blender until frothy.
- Pour the espresso into a mug. Top with the pumpkin spiced milk. Finish with whipped cream and a light dusting of extra spice.
